We at Funkt are proud to bring you this excitingly processed coffee as part of our first ever release. This special strawberry and wine yeast infused fermentation lot is sourced from producer Felipe Archila and his farm Finca La Pradera.
This is a boozy and fruity coffee with up front flavours of strawberry and rose. It's got a tangy lactic acidity akin to a yoghurt and a sweet juicy profile. It'll have your taste buds grooving with every sip!
Brew it as a filter, 'spro, or grab a bag for a bro. Either way, this is a groovy coffee you don't want to sleep on!!

Processing Description: Anaerobic honey process with strawberry and wine yeast
Altitude: 1350m
Varietal: Castillo
This lot utilises a combination of anaerobic fermentation and the honey method. First, ripe cherries are hand-selected and then undergo a 72-hour anaerobic fermentation in plastic tanks with added wine yeast and fresh strawberry pulp. CO2 is added to displace the oxygen, creating an anoxic environment.
After fermentation the cherries are then de-pulped and, with the mucilage still intact, dried on raised African beds. Shade is utilised to manage the temperature below 35°C until they reach the ideal humidity level (12%).

Packaging
Our packaging is made in a carbon-neutral manufacturing process and is fully recyclable in the UK. Our bespoke packing process means that our coffees remain as fresh as the day they were roasted for up-to 3 years while unopened.
